Ingredients:
– 1 medium zucchini
– 1/4 cup ricotta cheese
– 2 tbsp Parmesan cheese
– 2 tbsp extra virgin olive oil
– 1 tsp lemon juice
– 2 tbsp Italian spices
– 1 cup chopped heirloom tomatoes
– 1/2 cup basil
Instructions:
– Combine ricotta, Parmesan, lemon juice, olive oil, and spices
– Slice zucchini into coins
– Spread ricotta on zucchini
– Top with chopped heirloom tomatoes and fresh basil
– Smile because you have a light and easy keto snack that can be enjoyed anytime (most important step ?)
